SAN ANTONIO – Global travel restaurateur HMSHost, part of Avolta, has secured a new 10-year contract to open 14 new dining concepts at San Antonio International Airport (SAT), part of the airport’s expansive multi-billion-dollar improvement program.

The major expansion, which spans more than 19,800 square feet, will feature a variety of hyper-local, chef-driven restaurants, alongside familiar national brands. HMSHost will also continue operating La Gloria, a local favorite led by Chef Johnny Hernandez, under a newly extended five-year lease in Terminal A.

Local Flavor Meets National Innovation

HMSHost emphasized that the expanded culinary program will spotlight the “rich flavors, flair, and culture of San Antonio” through partnerships with nationally acclaimed chefs, including James Beard Award and Michelin Guide honorees.

Restaurants planned for Terminal A include:

  • Chef Johnny’s Mercado
  • Southtown Market
  • Tre Pizzeria by Chef Jason Dady
  • Freight Fried Chicken by Chef Nicola Blaque
  • Pharm Table by Chef Elizabeth Johnson
  • Panda Express
  • A proprietary tequila bar in collaboration with Hernandez and Herradura

Terminal B Adds Award-Winning Concepts

In Terminal B, passengers can expect even more locally inspired additions:

  • Southerleigh by Chef Jeff Balfour
  • 2M Smokehouse by Chef Esaul Ramos Jr.
  • The Tasting Room by Becker Vineyards
  • Bakery Lorraine, recognized as one of the Top 10 Bakeries in the U.S. by Fodor’s
  • Popeyes and Dunkin’, for more mainstream offerings

These additions represent a diverse mix of regional cuisine, national chains, and specialty concepts crafted for both tourists and frequent fliers.

Technology and Experience at the Core

As part of the upgrade, digital enhancements will be integrated into every location. These include:

  • QR code ordering and payment
  • Self-order kiosks
  • Digital menu boards
  • Self-checkout systems
  • OpenTable-style virtual waitlists

Guests will also benefit from Club Avolta, a loyalty program offering exclusive offers and cross-promotions across venues.

Avolta North America President and CEO Steve Johnson called the project “a rare opportunity to transform the airport experience,” saying that SAT aims to become a destination airport for travelers because of its food offerings.

Local Chefs Celebrate Opportunity

Chef Johnny Hernandez expressed his excitement, saying,

“It’s unheard of to have this much culinary talent in any airport… San Antonio’s best chefs are coming together for something truly special.”

Jesus Saenz, Director of Airports for the City of San Antonio, added that this partnership “will elevate the culinary experience in our city” and reinforce the city’s identity as a cultural and culinary hub.

Diversity and Economic Inclusion

HMSHost will operate the new dining venues in joint ventures with Airport Concessions Disadvantaged Business Enterprise (ACDBE) partners — promoting economic inclusion and supporting minority- and women-owned businesses.
